We are 4th generation cattle farmers from Saint Marys, Ohio. We proudly provide locally and humanely raised, non-hormone, all-natural great tasting beef with options that bring a consistent, delicious beef eating experience – at an affordable price. You know exactly where your beef is coming from. We are 4th generation cattle farmers from St. Mary’s, Ohio. We do not believe in growth hormones. The majority of mass cattle producers utilize ear implants to speed the growth of the animal. Those implants are loaded with steroid chemicals with names most of us cannot pronounce. We do not. We do, however, guarantee our animals are treated humanely with great respect and love while they are on our farm and deliver our high-quality beef to your door at a competitive price.

Buying your beef from a local farmer helps fuel the local economy. The steer’s hay is grown in our fields on the farm and local butchers are utilized. The supermarkets get their beef from industrial farms. We spend extra time and care in the herd to ensure they remain quality food for our customers.

Because convenience, taste, quality, locality, peace of mind, and knowing your farmer are important. Have you been to the grocery and experienced limits on purchase amounts or they are out of the cuts you need? Do you have any clue where the beef you buy in the grocery came from, how it was processed, or how it was raised? Rohrbach Cattle currently delivers in Central Ohio (a 100-mile radius from Columbus, OH 43205). We will do a scheduled trip to other locations if a group of beef boxes are purchased. Contact us for more information.

Absolutely. Dry aging is employed to improve the two most important characteristics of beef– taste and tenderness. Our meat ages in a safe climate-controlled environment between 14-21 days to develop that tender rich flavor. Improper aging leads to blandness. Typical store-bought beef ages half to less than half of our dry aging time.

The USDA recommends planning ahead. Thaw frozen meat in the refrigerator, where it will remain at a safe, constant temperature. That’s 40 °F or below. There are three safe ways to thaw meat:
IN THE REFRIGERATOR - A typical cut of meat will take a day to fully defrost in the fridge. Bigger cuts will take about 24 hours per 5 pounds to thaw.
IN COLD WATER - Keep the meat in the package it came in. Ensure it’s not open and is still airtight - if you have any doubt, place the package in a leakproof bag. Submerge the package in cold tap water. Change the water out every half hour to ensure continuous thawing. Small cuts of meat of about 1 pound can thaw out in 60 minutes or less. Larger packages, of 3 to 4 pounds, might take 2 to 3 hours using this method.
MICROWAVE - Place the package in a microwave-safe container and cover loosely. Use the defrost setting on the microwave, which usually means about 30% power. Some microwaves rotate food on a carousel. This helps the meat thaw evenly. Many microwave ovens have a preset time for thawing meat, depending on weight.
